Ground Turkey Skillet

Ingredients

1 large zucchini, quartered and sliced

1 pound lean ground turkey

¼ cup chopped onion

1 Tbsp tomato paste

¾ cups no salt added black beans, rinsed and drained

¾ cups no salt added corn

1 large tomato, diced

1 jalapeno, diced

1 clove of garlic, minced

2 Tbsp cilantro, chopped

1 ¼ tsp cumin

¾ tsp salt

¼ cup water

Lime wedges


Directions

  • Spray a large skillet over high heat with oil and brown the turkey, season with salt and 1 tsp cumin. 

  • Cook the meat, breaking it up, until the turkey is cooked through, about 5 minutes.

  • Push the meat to the side, add the onion and tomato paste and cook 1 minute.

  • Add the black beans, corn, tomato, jalapeno, garlic, cilantro and stir with ¼ cup water.

  • Add the zucchini and remaining cumin.

  • Mix and cover, cook low 4 to 5 minutes or until the zucchini is tender crisp.

  • Serve with lime wedges and more cilantro if desired.
