Edamame and Veggie Rice Bowl

Ingredients

½ cup cooked rice

½ cup edamame

¼ avocado, diced

2 Tbsp sliced scallions

2 Tbsp chopped cilantro

3 oz extra-firm tofu

2 Tbsp Citrus-Lime Vinaigrette

For the Citrus-Lime Vinaigrette:

¼ cup canola oil

Juice squeezed from 1 lime

Juice squeezed from 1 orange

2 tsp minced jalapeno pepper

¼ cup cilantro

¼ tsp salt

⅛ tsp ground black pepper


In a screw-top jar combine all of the ingredients. Cover and shake well. 

Directions

Arrange rice, edamame and avocado in a bowl. Top with scallions and cilantro. Drizzle 

with vinaigrette just before serving.
