Southwestern Avocado Toast

Ingredients

1 slice whole wheat bread

½ avocado, peeled, mashed

1 tsp lime juice, squeezed from lime

½ Tbsp cilantro leaves, chopped

¼ cup no salt added black beans, drained and rinsed

⅛ tsp cumin powder

⅛  tsp garlic powder

¼ cup corn kernels

1 Tbsp red onion

¼ Roma tomato, diced


Directions

  • Toast bread in a toaster.

  • Mash avocado in a small bowl and add lime, cilantro, and salt to taste.

  • Place black beans in a bowl and toss with cumin, garlic powder, and salt.

  • Place toast on a plate, spread mashed avocado on top, then black beans, corn, and tomato. Sprinkle red onions with cilantro.
