Lentil Sloppy Joes

Ingredients

1 small can tomato paste

1 tsp smoked paprika

1 tsp cumin

1 tsp garlic powder

½ green bell pepper, finely diced

8 hamburger buns

2 Tbsp olive oil

1 Tbsp Dijon mustard

¾ cup ketchup

2 cups brown lentils

1 medium onion, finely diced


Directions

  1. In a large saucepan, place the lentils and 6 cups of water. Bring to a rapid simmer. Reduce the heat and simmer uncovered for about 20 to 25 minutes, until the lentils are tender but still hold their shape and there is only a bit of liquid left in the pan.

  2. In another large saucepan or skillet, heat the olive oil over medium high heat. Add the bell pepper and onion and cook for 5 minutes until the onions are translucent. Stir in the tomato paste, ketchup, mustard, cumin, garlic powder, and smoked paprika. Once the lentils are cooked, add them and the pan liquid to the tomato mixture, then simmer for 5 minutes until thickened and warm. 

  3. Serve on a bun. Leftovers save for 3 to 4 days. You can also make in advance, refrigerate and then reheat in a saucepan.
