Ingredients

Fajita seasoning:

1 Tbsp smoked paprika

3 garlic cloves, minced

1 tsp cayenne pepper

1 tsp dried oregano

1 Tbsp cumin powder

For Fajitas:

2 Tbsp olive oil, divided

1 onion, sliced

1 pound shrimp, deveined

2 bell peppers, sliced

4 tortillas

¼ cup cilantro

Lime, cut into wedges


Directions

  1. In a small bowl whisk together all fajita seasoning ingredients.

  2. Add 1 pound of large shrimp to a shallow dish and sprinkle with half of the seasoning. Mix well to coat, then set aside.

  3. Heat 1 Tbsp of the olive oil in a large skillet over medium-high heat. Add the onion and pepper slices and sauté for 4-5 minutes until the vegetables have softened. 

  4. Add the remaining seasoning and mix well. Set aside on a plate. 

  5. Heat the remaining oil and add the shrimp. Cook for 3-4 minutes until they are pink and cooked through.

  6. Return veggies to the skillet and mix to combine. Garnish with a handful of fresh cilantro and serve with warm tortillas and lime.
