Cucumber and Tomato Salad

Ingredients

1 cucumber, sliced

½ medium red onion, thinly sliced

3 tomatoes, diced

2 Tbsp olive oil

1 Tbsp parsley

1 Tbsp red wine vinegar

Salt and pepper to taste


Directions

  1. Combine all ingredients together in a bowl and toss.

  2. Refrigerate for at least 20 minutes before serving.
