Tofu and Shrimp Lettuce Wraps

Ingredients

  • 6 shrimp, cooked and chopped

  • ½ block firm tofu, crumbled

  • 1 Tbsp olive oil *

  • 1 carrot, shredded

  • ½ cucumber, diced

  • 1 Tbsp low-sodium soy sauce or rice vinegar *

  • 1 head lettuce

Directions

  • Heat oil in a pan. Cook tofu until golden.

  • Add shrimp and soy sauce or rice vinegar. Cook 1-2 minutes more.

  • Spoon into lettuce leaves and top with veggies.

  • Roll up and enjoy.
