Tofu and Shrimp Lettuce Wraps
Ingredients
6 shrimp, cooked and chopped
½ block firm tofu, crumbled
1 Tbsp olive oil *
1 carrot, shredded
½ cucumber, diced
1 Tbsp low-sodium soy sauce or rice vinegar *
1 head lettuce
*Not included in order
Directions
Heat oil in a pan. Cook tofu until golden.
Add shrimp and soy sauce or rice vinegar. Cook 1-2 minutes more.
Spoon into lettuce leaves and top with veggies.
Roll up and enjoy.
