Grilled Chicken Cutlets with Rosemary, Garlic, & Lemon
Ingredients
4 boneless, skinless chicken breasts, cut into 8 cutlets
3 Tbsp fresh rosemary, minced
6 Tbsp olive oil
3 garlic cloves, minced
2 Tbsp fresh juice from lemons
Salt and pepper to taste
Directions
Heat 1 Tbsp olive oil in a large skillet over medium-high heat.
Whisk together garlic, rosemary, lemon juice, and olive oil in a large bowl. Add salt and pepper. Transfer half of mixture to a separate container and set aside.
Add chicken to the large bowl and turn pieces thoroughly to coat.
Once the pan is hot, carefully add the cutlets in a single layer, making sure not to crowd the pan. Cook for about 3-5 minutes or until golden brown.
Flip the cutlets and cook for another 3-5 minutes until the second side is golden brown and the chicken is cooked through.
Remove the cutlets from the pan and transfer to a serving platter. Re-whisk reserved marinade and pour it over the chicken. Serve immediately.
