Easy Shrimp Fajitas

Ingredients

  • 1 pound shrimp, deveined

  • 2 Tbsp olive oil, divided*

  • 2 Bell Peppers, Sliced

  • 1 Onion, Sliced

  • ¼ Cup Cilantro*

  • Lime, cut into wedges*

  • 4 Tortillas

    Fajita Seasoning:

  • 1 Tbsp Smoked Paprika*

  • 1 tsp Cayenne Pepper*

  • 1 Tbsp Cumin Powder*

  • 1 tsp Dried Oregano*

  • 1 tsp Garlic Powder*

    * Ingredients not provided in order

Directions

  • In a small bowl whisk together all fajita seasoning ingredients.

  • Add 1 pound of large shrimp to a shallow dish and sprinkle with half of the seasoning. Mix well to coat, then set aside.

  • Heat 1 Tbsp of the 2 Tbsp Olive Oil in a large skillet over medium-high heat. Add the onion and pepper slices and saute for 4-5 minutes until the vegetables have softened. 

  • Add the remaining seasoning and mix well. Set aside on a plate. Heat the remaining oil and add the shrimp. Cook for 3-4 minutes until they are pink and cooked through.

  • Return veggies to the skillet and mix to combine. Garnish with a handful of fresh cilantro and serve with warm tortillas and lime.
