Easy Shrimp Fajitas
Ingredients
1 pound shrimp, deveined
2 Tbsp olive oil, divided*
2 Bell Peppers, Sliced
1 Onion, Sliced
¼ Cup Cilantro*
Lime, cut into wedges*
4 Tortillas
Fajita Seasoning:
1 Tbsp Smoked Paprika*
1 tsp Cayenne Pepper*
1 Tbsp Cumin Powder*
1 tsp Dried Oregano*
1 tsp Garlic Powder*
* Ingredients not provided in order
Directions
In a small bowl whisk together all fajita seasoning ingredients.
Add 1 pound of large shrimp to a shallow dish and sprinkle with half of the seasoning. Mix well to coat, then set aside.
Heat 1 Tbsp of the 2 Tbsp Olive Oil in a large skillet over medium-high heat. Add the onion and pepper slices and saute for 4-5 minutes until the vegetables have softened.
Add the remaining seasoning and mix well. Set aside on a plate. Heat the remaining oil and add the shrimp. Cook for 3-4 minutes until they are pink and cooked through.
Return veggies to the skillet and mix to combine. Garnish with a handful of fresh cilantro and serve with warm tortillas and lime.
