Bánh mì Sandwich

Ingredients

  • 1 lb boneless skinless chicken breast

  • 1 tbsp Sriracha

  • 1 tbsp low sodium soy sauce*

  • 1 small cucumber, cut into thin strips

  • 1 small bell pepper, cut into thin strips

  • ½ cup carrots, shredded or julienne cut

  • 3 green onions, chopped*

  • 4 3 oz. French bread rolls

  • ¼ cup fresh cilantro leaves

  • 1 fresh jalapeño pepper, thinly sliced (optional)

Directions

  • In a small bowl, combine sriracha and soy sauce; brush sauce over chicken breasts, on both sides.

  • Preheat oven to 350 degrees F.

  • Lightly spray a baking sheet with cooking spray or line with aluminum foil. Arrange chicken breasts so none are overlapping on baking sheet and cook in oven for 30 minutes. Set aside.

  • Slice sandwich rolls horizontally. Layer one side of the bread with chicken, cucumbers, bell pepper, carrots, green onions, cilantro and jalapeno, and extra sriracha (if desired).
