Bánh mì Sandwich
Ingredients
1 lb boneless skinless chicken breast
1 tbsp Sriracha
1 tbsp low sodium soy sauce*
1 small cucumber, cut into thin strips
1 small bell pepper, cut into thin strips
½ cup carrots, shredded or julienne cut
3 green onions, chopped*
4 3 oz. French bread rolls
¼ cup fresh cilantro leaves
1 fresh jalapeño pepper, thinly sliced (optional)

Directions
In a small bowl, combine sriracha and soy sauce; brush sauce over chicken breasts, on both sides.
Preheat oven to 350 degrees F.
Lightly spray a baking sheet with cooking spray or line with aluminum foil. Arrange chicken breasts so none are overlapping on baking sheet and cook in oven for 30 minutes. Set aside.
Slice sandwich rolls horizontally. Layer one side of the bread with chicken, cucumbers, bell pepper, carrots, green onions, cilantro and jalapeno, and extra sriracha (if desired).
