Ingredients

4 slices sandwich bread 

4 large eggs

2 Tablespoons unsalted butter

Salt

Ground black pepper


Directions

  1. Use a 2 or 2 1/2-inch round cutter to cut out the centers of 4 slices of sandwich bread. Discard the centers.

  2. In a large nonstick skillet, melt 1 Tbsp unsalted butter over medium-low heat. Swirl the pan to ensure the butter coats the entire surface.

  3. Once the butter begins to sizzle, add 2 bread slices. Cook until the bread is toasted and light golden-brown on the bottom,; 4 minutes.

  4. Flip the slices. Crack one large egg into each hole. Season with salt and pepper.

  5. Cover the pan and cook until the egg whites are fully set and the yolk is still runny (the other side of the bread should be golden-brown too), 3 1/2 - 4 1/2 minutes.

  6. Transfer the toasts to a plate. Serve immediately. Repeat these steps using another 2 slices of bread and 2 eggs. Enjoy!
