One Pan Ranch Chicken & Vegetables

Ingredients

  • 6 red potatoes, quartered

  • 1 lb green beans, trimmed

  • 1 red onion, sliced

  • 4 Tbsp ranch dressing

  • 1 lb boneless, skinless chicken breasts

  • ½ tsp pepper

  • 1 lemon, sliced

Directions

  1. Preheat oven to 400 degrees F.

  2. Spray a baking sheet with nonstick spray.

  3. In a large bowl, combine all of the vegetables. Pour in 3 Tbsp of ranch dressing and toss to coat. Set aside.

  4. Place chicken in a line down the center of the baking sheet. Brush liberally with the remaining ranch dressing.

  5. Arrange vegetables around the chicken. Sprinkle with pepper.

  6. Bake for 30-35 minutes or until chicken is cooked through.

  7. Garnish with sliced lemon and serve.
