Microwave Banana Baked Oatmeal

Ingredients

  • 3 Tbsp Peanut Butter

  • ¾ tsp Cinnamon

  • 3 Bananas

  • 12 oz Silken Tofu

  • ¾ tsp Baking Powder

  • 1.5 Cups Rolled Oats

Directions

  1. Grease a microwave-safe mug or dish with cooking spray.

  2. Place banana and silken tofu in a bowl and mash together with a fork.

  3. Add oats, baking powder, and cinnamon and stir well to combine.

  4. Transfer the oat mixture to the greased microwave dish and microwave for 3-4 minutes.

  5. Cool for a couple of minutes, then drizzle with peanut butter.
